Rice pudding cakes

These little pancake like cakes are made from leftover rice porridge, and one of the things I look most forward to for Christmas.

makes around 12 small cakes

2 cups/400ml leftover cold rice porridge.
2 eggs
1 tablespoon orange or lemon zest
½ teaspoon ground cardamom
1 tablespoon sugar.
2 tablespoons plain white flour
Dairy free margarine for frying
Sugar and jam for serving.

With a fork mix the rice porridge and eggs together. Add in the rest of the ingredients and stir gently till it all comes together.
With a tablespoon, dollop the batter on a hot frying pan with melted margarine.
Turn them over when they start getting brown around the edge and firms up, about 2-3 minutes on each side.
Serve with, sugar and jam.

This might be a recipe that is possible to make with leftover rice pudding, but might need to leave out the sugar part and put in some more flour. If you make this please let me know how it turns out.
