In Denmark most children believe in elfs/gnomes, or nisser as they are called in Danish, and these nisser don't all live with Santa Claus, but in the attics or barns (if you have one) in you house.
Now the biggest rule at Christmas is to be nice to your nisse in December. If you leave some rice porridge or sweets out for them before going to bed, they will in return leave small presents for you and be nice to you the rest of the year. But if you don't you will get a very angry nisse that will hide your things and make your milk go sour.

So I thought for second advent recipe should be the recipe for rice porridge.
Rice porridge is served as a main meal, it is a bit more savoury than rice pudding, and is eaten with a lump of butter in the middle and cinnamon sugar sprinkled over it.

Serves 4.
240g of pudding rice
2 litters Lactofree milk
1 teaspoon salt
Homemade butter (see recipe here) or Lactofree spredable butter
Cinnamon
Sugar.

In a big pan over medium heat melt 1 tablespoon of butter/margarine, then ad the rice and let them fry a few minutes.
Add the milk and salt to the pan and slowly bring to a boil while stirring. Once it has reached the boiling point, turn down the heat to a slow simmer, put a lid on the pan and let it simmer for 50-60 minutes, stirring once in a while so that the milk doesn't burn in the bottom of the pan.
Mix together cinnamon and sugar to taste.
Ad a lump of butter in each serving and sprinkle with cinnamon sugar.
